Pecan-Candied Bacon, Eggs and Waffle with syrup

Here is my super-indulgent Candied Bacon, Pecan, Egg and Waffle Breakfast recipe. Granted, you would not want to eat this all the time, but it makes a great treat for a special occasion.

You can tone this recipe down by not adding brown sugar to the bacon or skipping the bacon altogether. 

Or you can just make the candied bacon as a snack or appetizer. It is hands-down delicious if you are a bacon lover. I like to use peppered bacon - that sweet plus savory and spicy experience is to die for!

Pecan-Candied Bacon 

Pecan-Candied Bacon

Ingredients
12 bacon strips, thick-sliced is best
brown sugar
chopped pecans

Instructions
1
. Get a rimmed cookie sheet and place baking parchment paper in the bottom. Place a wire rack on the paper, large enough to hold the bacon strips. Lay the bacon strips on the rack, not touching each other so they don't stick together when baked.

2. Bake in a preheated 375-degree F oven for 20 minutes.

3. Remove from oven and sprinkle the bacon with brown sugar and chopped pecans.

4. Place bacon back in the oven for approximately 10 more minutes.

5. Remove from oven and set aside.

 

Homemade Waffles

Ingredients
2-1/4 cups all-purpose flour
1 tablespoon baking powder
3 tablespoons granulated sugar
1 teaspoon salt
2 eggs
1/2 cup vegetable oil
2 cups whole milk
1 teaspoon vanilla extract

Makes 6 to 8 waffles

Instructions
1. In a large bowl, whisk together all of the dry ingredients.

2. In a separate bowl, whisk the wet ingredients together until well combined.

3. Slowly add the wet mixture to the dry mixture, whisking until smooth and well combined.

4. Pour some batter into a preheated waffle iron and cook according to the manufacturer's instructions until done. Make as many waffles as you need.

Fried Eggs to Serve on Waffles

Ingredients
eggs
butter for frying

Instructions
1. Melt the butter in a small skillet about the size of your waffles.

2. Fry 2 to 3 eggs at a time sunny-side-up, over easy, etc. If you cook enough for one serving at a time, you can get them to come out as a disk so they they lay perfectly on top of the waffle. 

 

To Assemble on Each Plate

1. Lay a waffle down first.

2. Place 2 or 3 bacon slices on the waffle (optional).

3. Pour some maple syrup over the bacon and waffle.

4. Lay 2 or 3 cooked eggs on top and enjoy!
