Flank Steak Roll-Ups, before cooking

These Steak Pinwheels are stuffed with cheese, garlic and spinach. They're a great way to fancy-up your steak.

Steak Pinwheels

Ingredients
2.25-pound flank steak
1 teaspoon coarse salt
1 tablespoon cracked peppercorns
1 tablespoon minced garlic
5 ounces cream cheese
3 slices Parmesan or Fontina cheese
1 cup fresh spinach leaves
2 tablespoons salted butter

Instructions
1. Place the steak between two pieces of plastic wrap, with enough room to expand. On a cutting board, use a meat mallet to pound the steak until it's 1/4-inch thick.

2. Sprinkle both sides of the meat with the salt, pepper and garlic. Spread the cream cheese on one side and cover with cheese slices. Place spinach leaves on top.

3. Roll up the steak, starting from one of the long sides. The rolled log should be about 4 inches in diameter. Wrap it tightly in plastic wrap and place in the freezer for 15 minutes.

4. Remove from freezer, unwrap the roll, and tie baker's twine around it in six evenly-spaced places, starting near the center and tying about 1-1/2 inches apart. With a sharp knife, cut the roll into six pieces, between the ties. Each piece should be about 1-1/2 inches thick with a tie in the middle.

5. Set your oven to 350 degrees F to preheat it. Place an oven-safe grill pan or a 10-inch cast iron skillet on the stove and set at medium-heat to preheat it.

6. Add butter to the preheated pan and cook the pinwheels on the stove for 2 to 3 minutes until they're browned. Turn them over and brown the other side for about 2 minutes.

7. Place the pan in the preheated oven on a rack in the middle position. Cook 8 to 10 minutes or to desired doneness. An instant-read thermometer can help with this.

8. When done, remove from oven and cover the pan with a foil tent for 5 minutes. Then remove the twine ties and serve.
