Fruit-Filled Cookies

These are the most delicious cookies! Anything filled with jam is going to go on my favorite list every time.

I filled these with my homemade berry jam, but you can use whatever flavor jam you like. Homemade or store bought doesn't matter. They bake into the most beautiful golden brown cookies with crispy flavorful edges leading into a nice soft center. Delicious!!

Jam-Filled Cookies

Ingredients
1 cup salted butter, softened
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 cup rolled oats
1 cup brown sugar
1 teaspoon ground cinnamon
1 cup jam, any flavor

Instructions
1. In a large bowl, combine the softened butter and granulated sugar. Mix until light and fluffy. Add the egg and vanilla. Mix again until ingredients are combined. 

2. In a separate bowl, sift together the flour, baking powder and salt. Gradually add to the wet ingredients. When well mixed, fold in the rolled oats.

3. In a small bowl, combine the brown sugar and cinnamon.

4. To assemble the cookies, use a cookie baller to make one even scoop of about 1 tablespoon. With your hands, roll it into a ball, and with a finger, create an indentation for the jam. Place a teaspoon of jam in it. Set it down and scoop an equal amount of dough. Roll it in your hands and then flatten it out. Lay the flattened disk over the jam-filled section. Fold the flat edges over the sides and pinch together to seal. Form it into one large ball made from both sections.

5. Roll the assembled dough ball in the brown sugar mixture. Place it on a parchment paper-lined cookie sheet. The dough balls should be about 3 inches apart. I like to set them 3 across and 3 down, to make 9 on each cookie sheet.

6. Bake in a preheated 350-degree F oven for approximately 17 minutes. It's best to check them after 15 minutes. They should be a beautiful golden brown when done.

7. Remove from oven and let cool on the cookie sheet for a few minutes before transferring them to a cooling rack.

8. Store the cooled cookies in a container with a tight-fitting lid at room temperature for up to 5 days or in the freezer for up to 3 months.
