Crackers Made with Herbs

Homemade crackers are so delicious and taste much better than store bought. I like to serve them with summer sausage, chicken salad, cheese and olives - a small charcuterie, if you will.

You can also serve them with a soft cheese spread to take them to another level of yumminess.

It's so worth it to make homemade!!

Homemade crackers with summer sausage & olives

Homemade Crackers
 
Ingredients
4 cups all-purpose flour
1 teaspoon salt
2 tablespoons garlic powder
1/2 cup shortening
2-1/2 cups water, room temperature 
fresh herbs such as oregano, thyme
    rosemary, chives (opt.)
fresh-ground Himalayan or sea salt for tops (optional)
Everything Bagel seasoning (optional)

Instructions
1. With a pastry cutter or two forks combine the flour, salt, garlic powder and shortening together until the dough resembles small peas.

2. Slowly add the water and continue to cut through the dough with forks or a pastry cutter. Once it starts coming together, remove the dough from the bowl and knead it for a couple of minutes. Then form it into a ball.

3. If you are using fresh herbs, chop them small and knead them into the dough. In my garden I have oregano, thyme, rosemary and chives growing so that's what I use, but you can use whatever you like best.

4. From the dough ball, take out about one-fourth of it at a time and roll out very thin. You may either cut the dough into squares with a knife or use a special square cutter like I have for cracker-making. You may cut them into whatever shape you like. Round works well too for this recipe.

5. Place your cut squares on a parchment paper-lined cookie sheet. You may place them fairly close together, as they won't spread. Poke holes in the cracker shapes with a fork. I make 3 to 4 rows.

6. If you want to add salt and bagel seasoning to the tops, do this before putting the cookie sheet into the oven. I use fresh-ground Himalayan pink salt with just a sprinkling of Everything Bagel seasoning on top of that. I like the extra texture the seeds give.

7. Bake in a preheated 400-degree F oven for 10 to 15 minutes. I like to rotate the cookie sheet halfway through baking to evenly distribute the browning. They are done when you have a nice brown coloring. They will be nice and  crispy.

8. Cool them on a cooling rack and enjoy.

That's it! Eat them by themselves or with your favorite toppings. Great in soups, stews and chili too.
